Beef roast - Eye Round, Shoulder, can be an inexpensive cut but you want something lean - trimmed of fat 1 medium onion 1 large jalapeno pepper 4 cloves of garlic 1 can of chopped green chilies Salt and pepper to taste
Tortillas or pita bread
Cut vegetables to a small dice and put in bottom of a crock pot. Put roast on top and cover with green chilies, salt and pepper to taste. Start crockpot and cook until it can be easily shredded with two forks. Shred beef. Drain excess liquid if necessary and save the liquid. (I have found that this is WONDERFUL to use when making chili)
Put beef on tortilla or in a split pita bread with your favorite toppings and enjoy!
