chuck roast canola oil Lipton Onion soup mix 2 large onions bag of baby carrots 3 large baking potatoes pkg. of fresh chives 8oz. sour cream milk salt pepper pkg of bacon
Pre Heat oven to 350. Salt and pepper chuck roast. Heat pan on med./ high with canola oil. Sear all sides of the chuck. In a roasting pan, place the seared chuck in the center, add the carrots, onions divided in fourths, 2 pkgs. of the Lipton onion soup mix, and 4 cups of water. Bake covered for about 4 hours or more until tender to fall apart.
Cut potatoes into 6 pieces each. Add to a boilng pot. Boil until the potatoes are soft and tender. Meanwhile cook the bacon and cut into small pieces. Chop the fresh chives into tiny pieces. Drain the potatoes into a mixing bowl. Add 1 stick of butter, the sour cream , about a 1/2 cup of milk, salt, pepper, chives, and bacon bits. Whip until the proper consistency.Taste and add more salt until desired.
Lastly pour a wonderful glass of wine, and serve. Watch it snow, and snow, and snow. This makes a yummy roast. Enjoy !
