1 pt. clams (or 2 small cans if you have trouble finding fresh ones) 1/4 cup salt pork 1/4 cup onion, chopped 1/4 tsp. salt dash pepper 1 cup clam liquid (ad water to make 1 cup if necessary or use 1 bottle of clam juice) 1 cup diced potatoes 2 cups milk or half and half
Drain clams, reserve liquid. Fry salt pork until lightly brown. Add onions and cook until tender. Discard salt pork. Add liquid, potatoes, seasonings and cook 15 minutes or until potatoes are tender. Add milk, heat thoroughlyk. Stir in clams. DO NOT BOIL!

salt pork, not pork salt. Sold in the meat case. It gives it a flavor. If you can't find it, use a few slices of uncooked bacon and fry it up. You just want it for the flavored grease to cook the onions in.
I usually use sweet onions, but any would do.

salt pork--kind of a squarish chunk of mostly fat, salted. dry. keeps forever in the freezer. useful in a lot of recipes.

well, ok, it sounds gross , but you use a small amt--a slice or so, and it's good flavoring

nameless, well I made the chowder last night. The only bad thing about it was I wanted more than I cooked. That was an awesome recipe. You all have to try it! Thank you for the recipe I have found a great clam chowder now.
