This is the one I've been dying to try, just haven't had time to make it. Had Indian fry bread as a kid in New Mexico and Arizona and I remember how good it was! Though I'm sure what I make won't live up to the memory...
Navajo Fry Bread Recipe
2 cups all-purpose flour 2 teaspoons baking powder 1/4 cup instant nonfat dry milk 1/4 teaspoon salt Warm water Vegetable Oil Honey or powdered sugar
In a large bowl, combine flour, baking powder, dry milk, and salt. slowly add enough warm water to form a workable dough (start by adding 1 cups of water, then more if needed); knead until smooth but still slightly sticky. Cover the bowl with plastic wrap and let the dough rest at room temperature for at least 30 minutes or up to 2 hours. After resting, divide dough into 4 equal pieces.
On a lightly floured surface, roll each piece of dough into a small ball and pat into a flat circle about 8 inches in diameter and 1/4 inch thick (it will puff up a lot); cut a steam vent i the middle of each circle of dough.
In a large, deep frying pan, heat 1 to 2 inches of vegetable oil (enough oil to float the dough) to 350 degrees F. Fry the dough pieces, one at a time and turning once, for 2 minutes on each side or until golden brown (the bread will puff slightly and become crisp and brown). Remove from hot oil and drain on paper towels. Keep warm until ready to serve.
Use for Indian Tacos (see recipe below) or serve with honey or powdered sugar.
Makes 4 Navajo fry breads.
Indian Taco Recipe
1 pound lean ground meat (beef, lamb, venison or pork) 1 cup diced onion 4 cooked Navajo Fry Breads (see recipe above) 1 head iceberg lettuce, shredded 3 tomatoes, diced 2 cups shredded sharp Cheddar cheese 1 (3-ounce) can diced green chiles, drained Sour cream (optional)
In a large frying pan over medium-high heat, brown ground meat and onions until cooked; remove from heat.
Place Fry Bread, cupped side up, on separate plates. Layer ground meat, lettuce, tomatoes, Cheddar cheese, and green chiles onto top of each Fry Brad. top with sour cream, if desired, and either roll up or serve open-faced with a fork.
Makes 4 servings.

You can use Olive Oil so it is healthy grease and of course never ever use margerine, just butter.

Ahhh....Indian Fry bread...Gee makes me miss the State Fairs back in the Southwest..... IFB...a must have!!!! Thanks for the recipie, Now I have to go home and make it!!!

My Doctor says Olive Oil is good for you and he is one of the few hundred certified Alternative Medicine Specialist. If you cannot afford Olive Oil, Canola is still a better choice than vegetable oil.

Olive Oil and Canola Oil are much healthier than vegetable oil and they do the same thing. Most people do not buy Olive Oil because it is so expensive. I prefer my health over the extra money anyday.

But for things like fry bread, the bad oils are part of the taste, and once in awhile won't hurt you. It's not like the kids and I will be eating this kind of stuff everyday! Which is why I suspect when I make it at home it won't taste the same as I remember it because of the lack of lard. Can you even GET lard?

I have gotten to the point where I put olive oil in almost everything I make. It does wonders for Lima Beans and meats. I don't notice the difference in the taste when I make fried dough. I will use Canola for a Brownie recipe.

Dice up some country ham and cook with lima beans or brussell sprouts with some olive oil. Good stuff!

I have always cooked everything in Olive Oil since growing up, and if OO isn't available then Canola.
As far as lard goes.....I imagine shortening would come fairly close.
I don't use Olive oil for baking...but for everything else.....

Isn't olive oil super-high in calories though? I really like just dipping bread in it too - I'm not sure what Italian places mix in with it, but it sure is good!

It is, but as far as cholesterol goes...it helps with the good cholesterol. Canola oil is better than other vegetable oils.

I have been trying to recreate Annie's Bull in the Pan and have been using Olive Oil and soy marinates & steak seasonings, tons of garlic, fair amount of oregano and lots of hot dried peppers. I am pretty sure that is the same mixture Annie's uses for bread dip, minus the soy and steak seasonings. The longer it marinates the better it is.

You can make that "italian butter" yourself fairly easy . Just poor some Olive oil into a cup and add a little bit of italian seasonings, (mcormicks makes a good blend) a dash of dried peppers, a smidgen of some garlic juice or salt...and some hot fresh bread, viola....

Made the fry bread this evening. Turned out great! ...and the kids won't be back for a snack later. Man, talk about a belly buster! LOL!

oil is oil as far as calories go, rich. but olive oil is the good oil, helps increase the good cholesterol and decrease the bad. substitute it for butter or other oils as much as you can. be careful when you fry--evoo burns to quickly, so use regular for cooking like that. use it in your salads. use it wherever. if you are worried about calorie count, cut down on total fats in the first place. yum

I fry in olive oil only, it just takes some practice burning the oil and smoking up the kitchen a few times before you learn that you have to use a lower heat. Of course Canola is better than regular vegetable oil, however my doctor would say that it really isn't because it is processed, he is an all natural/organic only freak. He also has a lot more money than I do so he can afford to buy the high dollar foods. There is a natural remedy for kidney stones using olive oil. Something like squeeze juice from a grapefruit, tablespoon of epsom salt and a cup of olive oil. Drink all that before you do to bed and you will pee out kidney stones in the morning.
