I always use the Texas Pete stuff. Not homemade, but what ya gonna do?

Wing Sauce to die for:
1 cup Catsup 1/2 cup Brown Sugar Firmly Packed 1/4 cup Lime Juice 2 tablespoons Ground Red Chiles To Taste 1 tablespoon Vegetable Oil 1 tablespoon Worcestershire Sauce 1 1/2 cups Onion; Chopped 3 Medium 4 Jalapeno Chiles * 2 Cloves Garlic Finely Chopped 12 ounces Tomato Paste 1 cn 12 ounces Beer Any Brand
* Jalapeno chiles should be seeded and finely chopped. (or for an added kick seed all but one....)
Heat all ingredients to boiling in a 2 quart saucepan; reduce heat to low. Cover and simmer 1 hour; stirring occasionally. Makes about 5 cups of sauce.
Place chicken wings in Sauce and let em soak for at least 6 hours (I soak em 24 hours).....then place in in broiler pan sauce and all and broil em till chicked is cooked.
Or fry, broil or boil chicken wings and throw them in a slow cooker, dump sauce all over the wings and slow cook them 4 hours or so.........

Had a recipe that used a LOT of habernaro peppers.. Like 16 or so, that needed to be seeded. Without gloves I stopped at 13... Also used nutmeg, cinnamon, and a lot of other spices that you'd think wouldn't work well together.
Made it for a party. I got ONE out of the bowl. They went quick.

Sounds like a Jerk Chicken recipe we made once. Don't remember quite that many habeneros though; biting into that must have really got your attention!

You know, surprisingly they weren't that hot. But didn't have gloves when seeding them and quit at 13. Now THAT was hot!

i always use "buffalo brand"--plenty good enough for me.
