Roast a whole chicken. Separate and reserve the drippings.
In a Dutch oven with a lid, bring 6 cups chicken broth to a boil. Meanwhile, in a large bowl combine 2 cups flour, 1 tbsp. baking powder, 1 tsp. salt. Cut in 2 tbsps. butter with a pastry blender or knives until it looks like cornmeal. Add 1 cup milk and stir. Drop heaping tablespoon blobs of batter into boiling broth. Cover; reduce heat; simmer for 12 minutes or until a toothpick stuck in a dumpling comes out clean.
Remove dumplings with slotted spoon. Reserve 2 cups of broth in the Dutch oven. In a small saucepan, melt 4 tbsps. reserved chicken fat (or butter) and add 4 tbsps. flour. Cook and stir for a couple minutes. Add to reserved broth along with liquid from chicken; salt and pepper gravy to taste.
Easy once you get the hang of it.
