This is very yummy for parties as an appitizer...and no livers !!!! 3 tbs. butter 2 medium boneless skinless chicken breast halves cut into 1/2 inch pieces salt and pepper to taste 1 tbs. chopped fresh garlic 1c. cashews, lightly salted 1/3 c. mayonnaise 1/2 c. onion finely chopped 1/4 c. Asiago Cheese, grated 1/2 tsp. Tabasco sauce 1/4 c. chopped fresh basil Melt butter in a large heavy skillet over med-hi heat. Sprinkle chicken with salt and black pepper. Add the chicken and garlic to the skillet and saute until the chicken is cooked through; about 3 minutes. Stir in 1/3 c. cashews. Remove from the heat and let cool. Line a loaf pan with foil and then waxed paper, having excess paper overlapping the edges. In a food processor, grind 1/3 c. fresh cashews and pour evenly over the bottom of the prepared loaf pan. Transfer the cooled chicken mixture to the food processor. Add the mayo, onion, cheese and Tabasco sauce. Process until smooth. Add the basil and process until just blended. Transfer the mixture to the loaf pan. Fold over the excess wax paper and foil and press down hard! Chill for at least 2 hours or overnight. When ready to serve, invert the pan onto a serving platter and surround the pate with more whole cashews. This is delicious with thinly sliced baguettete toasts ! Enjoy !
