This one is WAY good, but a little trickier to make. When adding the cheese, if it's not JUST the right temperature and added too quickly, the cheese becomes about the consistency of chewing gum. Tastes good, but... experiment and make it a couple times before making it for company. Even then, pray, make sacrifice, or something... ;D
4 TBS of Olive Oil
1/4 cup Chives
1/4 cup of Onion
3 cloves of Garlic
1 lb of Shrimp
1 and 1/4 cup of a dry White Wine
2 cups of fresh grated Parmesan Cheese
1 and 1/2 cups of Milk or Heavy Cream
White Pepper and Salt to taste.
1 lb of your favorite pasta noodles
Saute chives, onions, garlic, salt, white pepper and shrimp in olive oil in large heavy skillet over medium to high heat. DO NOT OVER COOK SHRIMP! Cook until they just turn white/pink.
Add white wine. (It will steam up and reduce quickly)
Add milk or cream and cook until very hot, but not scalded. (Do not let milk boil)
Gradually add about 3/4 of the Parmesan Cheese. (Reserve some for the table)
Pour sauce over 1 pound of your favorite pasta noodles.
